Pecan French Toast

Dietitian's Tip: To decrease calories and fat, use 4 egg whites instead of whole eggs. Chopped almonds are a great substitute for pecans as well.
4 slices whole wheat or multigrain bread
2 omega-3 eggs
2 Tablespoons milk
½ teaspoon vanilla
½ teaspoon cinnamon
½ cup chopped pecans
½ cup sliced strawberries
1. In a large flat dish, thoroughly stir eggs, milk, vanilla, and cinnamon. Soak bread in mixture for about 2 minutes on each side.
2. Coat each side of bread with chopped pecans.
3. Preheat pan or griddle on medium heat and coat with non-stick cooking spray. Fry French toast until nicely browned on both sides, about 3-4 minutes.
4. Garnish with strawberries and serve immediately.
